Some healthy dinner inspiration for you tonight…
Zucchini, Corn & Potato Falafels, the flalafel recipe has been shared here before I added 2 x zucchini grated, 1 x potato grated, 1 small onion grated, 1/2 cup peas, 1/2 cup corn and less chick peas (1 cup). In fact the chickpea I turned into chickpea flour in the blender so it’s easier to digest and the other vegetables made them so soft and delicious. Cooked them in some grapes seed oil. Sorry it’s not a full recipe but it was one of those dishes that I added as I went so if you want to check out previous posts of falafel – add all the vegetables here and then add the chickpea flour at the end it will work, play around with the mixture so you can roll into balls and add whatever season & spices you like. Just get creative and you never know what you will end up with…
