Wild Rice & Pine-nut Dish

Have you cooked with Wild Organic Rice?

We love it…Now technically speaking it’s not really rice but the seed of an aquatic grass that grows mainly in the regions of North America. Wild rice is gluten free, low in fat, high in amino acids and high in protein. Not only is it high in nutrients but big on flavor, with a nutty texture. I love having it as a side dish with my vegetables and salad, it’s really satisfying. Look out for it next time you are out grocery shopping, you will quickly convert from eating other rice.

If you are not familiar with cooking with the wild rice here’s my recipe that you are going to want to try.

Recipe to cook on stove-top:
2 cups organic wild rice (rinsed well before cooking)
4 1/2 cups filtered water or vegetable stock
1/2 tbsp Celtic salt
1/2 tsp chili flakes
1 tbs organic tomato paste
1/4 cup extra virgin olive oil
1/3 cup organic pine nuts

Directions:
Place olive oil with pine nuts first in saucepan to sautee a little and then add in the rice with the remaining ingredients. Bring to boil on medium heat, stirring well, until the liquid is fully absorbed. Basically you can season this dish with whatever spice you like, but this is how I make mine and I try and keep it simple it will take about 45 min – 1 hour to cook. I have garnished mine with fresh shavings of cucumber and fresh herbs.
