Wholemeal Spelt Waffles with Poached Pear

Hey guys how are you all?

It’s April already, after Summer and Spring, Autumn/Fall is one of my favorite months as the days are still a little milder but mornings and evenings are a lot cooler…and it brings to us different joys, colors, tones and fresh seasonal produce.

So I’ve been enjoying the most delicious pears and apples fresh from the farmers market’s of late and finally poached some pears on the weekend to accompany some waffles.

These waffles are mostly of the healthier type as they’re made with #wholemeal #speltflour and coated with coconut cinnamon sugar, plus a little drizzle of maple – which was really probably a little indulgent…

So to poach some pears all you need to do is have some cinnamon quills (I used 2, 8 cloves and 1 vanilla pod) for 4 pears and 1 tablespoon of raw #organic honey. Place 4 cups of filtered water and bring to the boil and then reduce to low heat adding in pears, honey, spices and vanilla. They would need around 20 minutes, be careful not to touch them too much so they don’t fall apart.

So leave your pears aside to cool out of the liquid and get the coconut cinnamon sugar happening.
Here’s what you need – 1/4 cup powdered down coconut sugar so it’s finer just place it in a food processor and then mix through 1 1/2 tablespoons of ground cinnamon and next let’s get started on the waffles.

Recipe for Cinnamon & Coconut Sugar Wholemeal Spelt Waffles:

Makes 8 waffles – if you want to make less halve your ingredients or just make and freeze them for later on.

1 1/2 cups Wholemeal spelt flour or just plain spelt or white flour – whatever is your preferred flour choice
1 tbsp baking soda/powder
1 tsp ground cinnamon
1 tbsp ground flaxseed
2 tbsp melted coconut oil
1 tsp vanilla extract
1 tbsp maple syrup plus extra for drizzle if you wish
1 cup almond milk

Simply mix your dry ingredients in one bowl and then add your wet ingredients. Make sure your waffle cooker is on and you’ve sprayed it with a little oil so they don’t stick.
Pour in and let the waffle machine do it’s magic. Remove, stack, and dunk them in the coconut cinnamon sugar while hot. Then simply add a few crushed raw walnuts, drizzle your maple add your pears and you’re ready to indulge, best served with a hot cup of coffee or tea…
