White Bean Stew with Greens

Ok whilst it still feels like summer out, this dish is very autumnal that’s for sure. It’s a traditional Turkish Bean Dish known as “Kuru Fasulya”…and yesterday I had a little bit of fun cooking it all with some of you on a “live” video over on my Instagram account.

Best served with crunchy home style bread, organic of-course which I picked up after the photo so it’s not here for you to see.

Recipe is here below and the beautiful green chard – silver-beet is from my dad’s garden #homegrown and the peppers are from our friends Sadiye also homegrown & organic so thank you too! Love all the homegrown end of summer produce at the moment.

Recipe:
800 grams pre-cooked or 2 x canned cooked organic cannelini beans (rinse well)
4 medium carrots
2 cups fresh chopped tomatoes
2 cups fresh chopped chard/silver-beet
1 onion sliced
4 tbsp tomato paste
1/8 cup olive oil (to sautéed) and extra virgin olive oil to garnish at the end
1/2 tsp cracked pepper
1 tsp salt
1 liter filter water

Firstly sauté the onion and carrot in olive oil, then add in beans, tomato, tomato paste, seasoning, water and chard is last. Allow it to simmer for about 30 minutes and check if you need more salt or pepper to your taste buds and add accordingly…serve with your favorite bread or rice! It’s the perfect vegan/vegetarian meal, high in fiber & protein.
