Summer Freekah Radish & Green Salad

Hello Monday…hope everyone had a great weekend. Today I’m sharing with you another one of my salad creations. Actually it’s a Freekah Salad with a Mediterranean twist – has anyone else tried freekah? It’s so delicious and makes a very hearty and nutritious meal.

Wholegrain freekah is packed full of protein, dietary fiber, vitamins & minerals, in particular calcium, potassium, iron and zinc than most mature wheat. It’s actually green wheat harvested young and then toasted and cracked, although the one I used here is a whole freekah.

Such a simple meal to prepare – simply cook it in filtered water with the saucepan covered and then drain any left over water. Add whatever delicious vegetables and salad items you may have. I have previously made it with roasted vegetables but this version is a more fresh spring/summer salad style.

You will need the following to make my Mediterranean style Freekah salad
2 cups cooked wholegrain freekah
1 red capsicum chopped finely
1 cup radishes sliced thinly
1/2 cup chopped coriander/cilantro
1/2 cup chopped flat leaf parsley
1 small fennel sliced finely
1/2 cup kalamata olives
5 small spring onions chopped finely
2 small cucumbers chopped finely
1/4 cup chopped mint
few sprigs of dill
handful of pomegranate arils PomLife
Dressing: Juice of 1 lemon, 1/3 cup extra virgin olive oil 1 tbsp celtic salt
