Oven baked sweet potato fries with sprinkles of polenta and sumac and a delicious dip of avocado, lemon & chili…the perfect recipe for lunch or dinner!
So we all love sweet potato right? To me they taste like candy when baked and crispy, do you agree?
Nutritionally they have low G.I. and are packed with vitamins A, C, manganese and also a good source of copper, vitamin B6 & potassium according to the World’s Healthiest Foods (George Mateljan Foundation) recommendations.
So simply peel and clean your potatoes, slicing thinly and laying on some baking paper on a tray, drizzle with a little olive oil, 1 tbsp polenta (organic) & 1 tbsp sumac and mix them up evenly. Bake on medium to high heat until crisp & cooked. About 30 minutes. Remove from oven and add fresh parsley flakes, and a side of avocado, lemon & chili dip.
