Happy new week everyone…it’s Monday already!
Here’s another cake I shared over on my Instagram page – it’s one I baked a few weeks ago and is an adapted version of my orange and poppy seed cake, I just love mixing up my ingredients. This version is an Orange & Almond Spelt cake made with organic ingredients as below.

Orange & Almond Spelt Cake
2 cups organic spelt flour Kialla Pure Foods
1 tsp organic baking powder
¼ cup organic coco sugar (powdered down) Loving Earth
1 cup freshly squeezed orange juice
½ cup grapeseed oil or coconut oil if you prefer
1 flax egg
1 tsp vanilla
1 tbs orange zest
¼ cup slivered organic raw almonds
Slices of half orange to decorate plus drizzle of rice malt syrup Pureharvest
Mix all wet ingredients and then dry ingredients with wooden spoon. Place in a lined round baking tin and then decorate with orange slices and drizzle with rice malt syrup. Bake in pre-heated oven on 220 degrees for 45 min. Enjoy
