Here’s my version of the Raspberry Jam Drop Cookie – Organic, Gluten Free, Dairy Free & Refined Sugar Free
Deliciously good!
So I made these goodies with rice four & sorghum grain (turned into flour) in #vitamix Sorghum is a gluten-free ancient grain and a good source of protein, B vitamins, and minerals such as iron and magnesium…
Ingredients:
1 cup organic sorghum flour @absolute_organic 1/2 cup organic rice flour @absolute_organic
1/2 tsp organic cinnamon
1/2 tsp organic baking powder
1 cup organic shredded coconut
1/2 cup organic maple syrup
1/3 cup organic coconut oil melted
Jam:
1 tbsp maple syrup
1/2 1 cup organic raspberries
Mix the liquid items first and then add dry items. Once combined roll tbsp size of cookie onto lined baking tray and press down. Make thumb print and drop raspberry jam in. For the jam just process the berries and syrup in blender.
Bake for about 15-20 minutes. Allow to cool and enjoy. This made 15 in total. It’s my first attempt so I will definitely be making double, or triple next time as they were so good and didn’t last!!
