Coconut Oat Besan Cookies

Hello long weekend…I know it’s a little too hot to be baking today but nevertheless I’ll share my Oat Besan Cookies with you…

I baked them a little while ago, again you would have seen them over on my Instagram page if you follow there. So here’s my recipe if you are interested, the addition of besan – chickpea flour was great, added a nice crunch and texture to the cookies.

#Vitalityandmore Oat Besan Cookies

Recipe: {makes 12 cookies}

Baking time: 20-25 minutes

1 cup spelt organic flour or plain flour Kialla Pure Foods
1 cup organic oats Kialla Pure Foods
1/4 cup organic besan flour Kialla Pure Foods
3/4 cup organic dessicated coconut
1 cup coco sugar organic (powdered down)
1/2 cup melted coco oil
2 tbsp organic maple syrup Pureharvest
1/2 tsp baking powder
1 tbsp ground organic cinnamon
1/4 cup coco water Natural Raw C
1/4 cup melted #vegan chocolate to drizzle

Directions:
Pre-heat your oven to 180 degrees and line 2 baking trays with paper. Place flour, oats, sugar and cinnamon into a bowl. Melt coco oil with maple syrup then add in baking powder/soda and stir well. Add in to dry ingredients and add coco water, mix well with spoon. Then roll ice-cream scoop of mixture into ball and flatten slightly on tray if you want big cookies like mine, if smaller use a tablespoon to measure out.

Bake for 20-25 min on 180 degrees. Allow them to cool or enjoy chewy and warm! Happy Baking my friends xo
