Coconut & Almond Slice

Something I created when I first started to make #rawvegan slices was this little #chocolate coconut & almond slice – and I keep making it all the time, you would have seen it shared here before…it’s so quick to prepare, just set in the freezer and enjoy straight away! My kinda dessert – coz sometimes we need a break from #baking right?

So I’m happy to share my recipe with you all again, please do try it! P.S. if you want the slice thicker just double the quantity – Happy Tuesday everyone…

#Vitalityandmore Chocolate Coconut Almond Slice:

1 1/4 cup organic desiccated coconut
1 1/4 cup organic almond meal
1/2 cup coconut oil melted
1 tsp ground cinnamon
2 tbsp organic rice malt syrup Pureharvest
Few drops of orange or lemon essential oils if you like for extra freshness
For the topping:
1/4 cup vegan chocolate melts
1/4 cup caramel (Loving Earth brand)
1 tbsp coco oil
1/4 cup raw almonds sliced for the topping

Directions:
Simply melt coco oil first, put aside, mix all dry ingredients and then add oil and syrup. Mix well with spoon until it forms and sticks together. Place on a lined small square tray and put in freezer to set for about 10 min. Meanwhile chop almonds, and then melt chocolate, caramel and coco oil together on a double boiler, pour over the slice evenly, throw the almonds on top and back in the freezer to set again in 10 mins, remove and cut up to your desired size. Total time is about 30 min – ENJOY!
