Hello Friday…So here’s a new ice-cream I created using some coconut yogurt (dairy free) and chocolate peanut butter and I am loving the texture and taste.
So I was craving some ice-cream the other day as we had temperatures over 30 degrees and I made this…it was a little experiment and I practically threw in these ingredients and voila here it is, no ice-cream machine needed, it’s vegan, and refined sugar free. Best of all it has only 4 ingredients and all natural!
Blend in your Vitamix or high speed blender the following:
1 cup organic natural coconut yogurt – I used Coyo.co.nz
2 frozen organic bananas
1/2 cup organic chocolate peanut cacao spread by Mayver’s
1 1/2 tbsp organic vanilla extract – I used Grounded Pleasures
Once it’s all even blended you can actually enjoy it straight away as it’s rich and creamy, buy it’s best if placed in the freezer to set a little which is what I did and then topped with some organic cacao nibs for a little crunch – we enjoyed these withe some fresh organic strawberries and it was yummy – hope you can make it for summer, I know that I will be.
