So here’s #myrecipe and I do hope you enjoy them as much as my family and I do. FYI the recent bake didn’t last very long…it seems I need to make 2 batches at a time.
Makes 12 cookies (portioned with ice-cream scoop before baking)
1/2 cup organic coconut sugar
1/3 cup light organic olive oil @bertollioliveoil_australia
4 tbsp almond milk @goodbetterbruce
1/2 tsp organic vanilla bean paste @queenfinefoods
1 3/4 cup organic spelt flour @kiallapurefoods or plain flour or #glutenfree if you prefer
1 tsp organic baking powder
Pinch salt
1/2 cup organic dark chocolate shavings or Choc chip @greenandblacksaustralia
Method:
1. Mix coco sugar, oil, milk, vanilla bean paste altogether to blend with spatula.
2. Add flour, baking powder, salt and mix together.
3. Gently fold in chocolate. Ensuring dough is evenly mixed.
4. Cover and place in fridge for 1 hour.
5. Remove and roll into 12 equal size balls using small ice-cream scoop as measurement.
6. Place all 12 spaced apart on lined baking tray and gently press to flatten a little.
7. Bake on pre-heated oven on 180 degrees for 12 minutes, if you want them a little crunchier bake for 15 min.
