Here’s my Raw Vegan Chocolate, Buckwheat and Nut bars for you to try.
Well we’ve just finished them, they lasted a week in the fridge and here’s the recipe my dear friends. These have got to be my favorite creation ever, I promise you will want to try them, as long as you don’t have any “nut” allergies. They are delicious, healthy & full of superfood!!!
Ingredients:
(now I’ve used all organic if it’s not your thing then that’s okay – conventional will do)
1 cup raw buckwheat
1/2 cup raw almonds (chopped)
1/2 cup raw hazelnut meal
1 cup coconut flakes
1 cup puffed amaranth
1/2 cup chia seeds Organic Burst
1/2 cup cocoa nibs
1/2 cup sunflower seeds
1/2 cup raw cashews (chopped)
2 tbsp ground cinnamon
1 cup peanut butter
1/4 cup coconut oil
1 cup rice malt syrup Pureharvest
1/4 cup vegan chocolate melts Loving Earth
Firstly, place all dry ingredients into a large bowl. Then
in a saucepan on low heat melt the peanut butter, rice malt syrup & coconut oil until it’s all mixed into a creamy texture. Pour the mixture into the dry bowl and mix through with a spoon first to ensure it’s all even. You will need a large rectangle shape pan lined with baking paper and then pour it in. You will need to press down firmly as the texture can be a little difficult to handle, but once it’s all flattened with a spatula and you’re happy place into the freezer to set for 1 hour. Remove and drizzle melted vegan chocolate and freeze again.
Remove and cut up, you should get around 24 pieces. Enjoy! Creating muesli/snack/nut bars has been my favorite thing to do here. You see I don’t buy any for the family and prefer to make my own as I know 100% what goes into it and it’s all 100% natural and good for you.
