What do I love most about #autumn

Made these beauties a couple of weeks ago as another side #dessert for my daughter’s birthday and they were enjoyed by all, luckily there was a little left for breakfast the next day and I can happily say I’m making another batch soon…
Here’s the recipe if you want to give them a go too, are you a lover of all things quince too? Quince paste, jam? Would love to know what you make with your quince?
#Vitalityandmore Recipe:
6 Quinces small to medium, wash off excess skin
1 cup organic maple syrup
1/4 cup coconut sugar (processed to make fine)
juice of 1 orange and zest
zest of half lemon
6-8 cups of water
4 cinnamon quills
2 whole vanilla beans scraped out (but use whole pod also)
8 cloves
1/4 cup of chopped air roasted hazelnuts for decorating
Method:
Cut quince up into quarters and place in a baking tray, add all the liquid items first then the spices, etc.
Cover and place in preheated fan forced oven on 180 degrees
and let the beautiful aromas fill your home. They will need to bake for a good 2.5 hours covered and then remove cover and bake again for another 2.5 hours until you find them looking soft and beautifully pink in color.
Serve them warm or cold – sprinkle with your favorite nuts, as I used hazelnuts and eat with yogurt, ice-cream or just devour them on their own.
