Hello everyone…how are you all? The weeks are flying by so quickly these days and it’s almost Christmas. It’s been quite some time since I’ve shared some of my baking creations.
A few weeks ago I got my baking on, it was a wet weekend and I baked my sister who’s expecting a baby in the new year some mini galette using my Rhubarb & Berry Compote (shared previously) and an Apple and Cinnamon one too.
So here’s the recipe if you guys are interested. I was so happy with the crust it was almost like a shortcrust pastry only better.
My Apple Galette:
Pastry:
2 cups organic spelt flour Kialla Pure Foods
1tsp salt
3/4 cup organic coconut oil (melted)
8 tbsp ice cold water
1 tbsp organic vanilla essence Grounded Pleasures
So basically this measurement makes 1 large galette or 3-4 mini ones depending on how big you make them…
Apple Filling:
8 med sized organic red gala apples (half peeled and the other half not for decorative purposes – looks lovely when baked)
1/8 cup filtered water
1 tsp organic ground cinnamon
1/4 cup organic coconut sugar (plus a little extra for dusting on pastry before baking)

Method:
Core and slice apples firstly and place in a pan with all other apple filling ingredients on medium to low heat to cook for about 5-10 minutes, we don’t want to over cook, just lightly blanch them
Secondly, you will need to melt your coconut oil, sift the flour and add all other items for the crust in a bowl. Leave the coconut oil aside and while its still hot add the ice-cold water and mix it through first. Then pour the liquid into the flour, add the salt and vanilla essence and mix through until you get an even dough texture.
Roll out the dough onto your baking paper into the desired shape (will make 1 large galette or 3-4 smaller ones if you prefer) and then place the filling into the middle, leaving the edges so as to fold in once it’s all even. Fold away, sprinkle with some coconut sugar and then place into the oven on 200 degrees and bake for 45 minutes or until crust is crispy and browned. Remove allow to cool or just serve hot and enjoy it with your favorite ice-cream or on its own – so so yummy!
