Now with spring officially here, it can only mean one thing…fresh mangoes and more delicious organic fruits are on the way. I am looking forward to eating stone fruits such as cherries, mangoes, nectarines and peaches. This means I hope to create lots more yummy healthy dishes with these fruits and of-course share them with you all.
Here’s a delicious Mango Ice-cream I would like to share with you all today…It’s completely Vegan, Dairy Free and Refined sugar free. Contains only 4 ingredients and one of them being Tumeric.
Yes Tumeric! Tumeric we all know contains natural healing properties and is a powerful spice with anti-inflammatory properties. The curcumin in tumeric (“the deep orange color”) is often used to color foods and even cosmetics.
According to WebMD Turmeric is used to treat many ailments and health issues in particular “arthritis, heartburn, joint pain, stomach pain, Crohn’s disease, stomach bloating, jaundice, liver problems, high cholesterol, fatigue” and many more. Of-course please always consult your medical or health professional for advice on how it can help you. I often cook with tumeric for it’s anti-inflammatory powers and add it to smoothies, but it’s the first time I have made a dessert with it.
This mango vegan ice-cream consists of coconut yoghurt which gives it the creamy texture and the best part about it is you don’t need an ice-cream machine to make it – just a good blender or Vitamix.

Recipe:
Serves 2-4
2 cups frozen chopped organic mango
1 cup vanilla coconut yoghurt {I used Coyo.co.nz}
1/4 cup organic maple syrup
1 tbsp fresh organic tumeric finely grated
Directions:
Simply place all items in your blender and then freeze in a small container (lined with baking non-stick paper) until it sets firm. Remove and enjoy this delicious, creamy vegan mango ice-cream free from any artificial colors or preservatives.
