Everyone loves a good pasta dish right? This was a dish I cooked last week for the family and shared on my instagram story, simple organic #glutenfree pasta and all vegan with lots of yummy organic vegetables including some homegrown basil from #mygarden and eggplant from my sister-in-laws garden – so delicious!
So for this simply dish you will need:
Serves 4
10 fairy tale eggplants (mini ones – cut into half)
6 roma tomatoes (cut into quarters)
2 green chili finely chopped
1/3 cup kale finely chopped
extra virgin olive oil
salt & pepper to taste
handful of basil
500 gram gluten free pasta
Basically put your pasta to cook in boiling filtered water and then meanwhile char grill the eggplants and then drizzle some olive oil, add the kale, tomato, chili, salt & pepper to taste and allow it to saute a little. Once ready drain your pasta and start to mix through. Finish off with fresh basil leaves and serve! Simple, delicious and dinner in less than 30 minutes.
