So who’s having a BBQ this long weekend to celebrate the Grand Final Football Season here in Melbourne?
Need some salad inspiration? How about trying my Cous cous & Chickpea salad?
Full of nutrition and good fiber, keeping you full for longer…and especially good for my fellow vegetarian or vegan friends.
To make this salad simply:
Cook 1 cup organic chickpeas – drain and allow to cool
Soak 1 cup spelt organic Cous Cous and mix through chickpeas
Add 1/2 cup shredded purple cabbage
1 small red onion chopped
I cup cherry tomatoes sliced into haves (organic)
2 small cucumbers chopped finely
1 cup arugula or roquette
Handful of fresh coriander/cilantro leaves only
Handful of fresh mint (mine was from the garden) chopped finely
Mix all fresh ingredients with the cous cous and chickpeas and then add the dressing.
It’s really a no fuss salad dressing and a very Mediterranean one might I add, but I use it on all my salads and its really quite refreshing. Just use the juice of 1/2-1 fresh lemon, 1/4 cup extra Virgin olive oil and Celtic salt about 1-2 tsp. Taste it as you mix through and if you feel it needs more or less then add accordingly.
