Beetroot Hummus Dip

Making dips with seasonal #organic produce is probably one of my fav savory things to make, great for snacking, on toast, in sandwiches, wraps, platters or when I’m entertaining…which I miss so much right now! 💗🖐🏻

So today I’m sharing my Beetroot Turkish Mediterranean Style Hummus Dip 💗

For the Dip:
Makes a small bowl
2 Organic Beetroot (small/medium size) roasted in oven and allow to cool before blending
1-2 small cloves (pieces) garlic (roast in oven with beetroot)
1 cup cooked chickpeas
Juice of 1/2 lemon and little zest
2 heaped tbsp hulled tahini
1/2 tsp sea salt or more if you like
Pinch of black pepper
4 tbsp EVOO plus extra for top garnish

For the garnish:
Fresh herbs for top is a must adds great flavor, texture and finishes off the dip so nicely.
In this dip I used flat leaf parsley and dill – I also love mint or cilantro/coriander too, anything goes mix it up, add pine nuts, hemp seeds or pepitas I didn’t have any so I didn’t use them, but get creative…
1/2 tsp Chili flakes
1 tsp sumac

Simply peel beetroot once cooled down and chop into 4, place into your blender adding in all other ingredients except for garnish items and blend together, I used my @vitamix and if you feel it’s too thick for whatever reason add couple tbsp of filtered water to smooth out.

Once blended place in your bowl, add little EVOO, sumac, chili flakes, fresh herbs and enjoy with your fav bread, crackers, crisps and veggie sticks!! I just ADORE beetroot for that earthy rich flavor and burst of color, not to mention ALL the nutritional health benefits associated with this beautiful root vegetable.
