Throw back to Sunday Pancakes and this breakfast I shared with my daughter…
Hope your weekend was good, I enjoyed seeing Adele live in concert with my daughter and was totally moved by her music, charisma and soul. She’s such an amazing woman.
Anyway if you would like to recreate this little spread here’s the recipe for these gluten free, sugar free and dairy free pancakes:
1 flax egg (1 tbsp ground flax seed to 3 tbsp water)
1/2 cup organic buckwheat flour (Kialla Pure Foods)
1/3 cup organic almond milk or other plant based (Pureharvest)
1/2 tsp baking soda/powder (aluminium free)
1 tsp organic coconut oil for cooking
2 drops organic lemon pure essence
1 tsp organic vanilla (Grounded Pleasures)
1/2 tsp ground cinnamon
Basically once you do the flax egg first then add all the remaining wet ingredients and then dry ingredients and beat well. Pour onto a hot pan and cook.
Serve with your favorite fruits, (strawberries from my little garden) some organic maple syrup and coconut yogurt which is what we had here.
