So I've shared my recipe before on the socials, and if you haven’t tried it yet - then this is your sign to bake it. Its #dairyfree and #eggfree and #plantbased and delicious, so simple to make. Recipe for you to SAVE & BAKE
Orange & Poppyseed Cake 🍊
2 cups spelt flour or all purpose flour
1/2 cup raw organic sugar or coconut sugar (powered down)
3 tablespoons poppyseed or chia
1 tablespoon baking powder
1 cup freshly squeezed orange juice
1/2 cup olive oil or other oil you prefer
1/4 cup almond milk
1 flax egg (1 tbsp ground flax meal to 3 tbsp water, mix and let it sit for 10 min)
1/2 teaspoon vanilla essence
Rind/zest of 1 orange grated into mixture
Plus 1/2 extra orange for slicing and decoration (optional)
Instructions: Pre-heat oven to 180 degrees and mix all wet ingredients to 1 bowl and dry ingredients to another. Then add wet ingredients to dry & blend together. Place into your preferred baking tin lined with paper and bake for 55 min. This mixture also makes 12 muffins.
