Recipe (Makes 8 donuts)
1 cup Plain organic flour
1/3 cup coconut sugar powdered down
1 1/2 tsp baking powder
1/4 tsp fresh grated nutmeg
1/4 tsp ground cinnamon
1/2 cup organic almond milk
1/2 tsp apple cider vinegar
1/2 tsp vanilla extract
4 tbsp melted coconut oil
1 flax egg (1 tbsp flaxseed meal & 3 tbsp water - mix together first)
For the Cinnamon Sugar Coating:
1/3 cup raw sugar or coconut sugar
1 tbsp ground cinnamon
1/3 cup melted coconut oil to brush
Method:
Simply mix all dry ingredients in one bowl and then heat up the almond milk & apple cider vinegar to be luke warm, then add in the flax egg and vanilla to liquid and whisk all wet items to dry items.
Scoop into your donut rings and bake in pre-heated oven on 180 degrees for 15-20 min until they are fluffy and golden colour (and when skewer is clean when tested). While donuts are baking, melt your coconut oil for glaze and mix cinnamon to sugar. As soon as they have cooled a little brush the donut with coconut oil and then crumb with cinnamon sugar and leave aside. You can enjoy them warm or cold...Warning: they are so delicious and you'll be making them on repeat!
